Cooking is Fun and Easy--Chicken Salad

Earlier in the week, I made a new recipe that I was going to share with you all that ended up just being...meh.  So, I had 5 leftover baked chicken thighs.  What to do?  Make chicken salad, that's what!  I'm super happy with how it came out.  I love chicken salad, so easy, especially if you buy a grocery store rotisserie chicken, which is what I usually do.

About 2 cups of chicken, diced
4 pieces of celery, diced
2 tbsp minced shallot
1/3 cup Duke's mayonnaise (I love this brand for salads--it's got a bit of apple cider vinegar in it, gives a nice tangy flavor)
Garlic Powder
Ground celery seed
Chinese Five Spice

I dice the chicken first, then spread it out in a single layer on my cutting board, and salt, pepper, and garlic powder it to taste.

Put the chicken, celery, and shallot in a bowl, add mayo and celery seed, and mix well.  Then I start adding the five spice a little at a time, tasting, until I get it where I want it. 

I like to wrap this in lettuce leaves, or use it as a topping for salads.  So crunchy and tasty!  For this little snack, I filled a Romaine leaf, and sprinkled it with Trader Joe's Everything Bagel seasoning.  YUM!


  1. That looks good. I use Miracle Whip in my chicken salad - really gives it a tangy taste.
